Does it matter how many times you do something

I mean the saying goes, "practice makes perfect," right? So why is it that when we rehearse something over and over again in our heads the outcome is often so much different than what it was so planned out to be? We plan each sentence to be so perfectly, saying it over and over again, so it holds just the right inflection, to convey our feelings so intimately....However, we never plan for what the other has to say. How in one moment, one minute, one word, our entire world will come crashing down around us. It's a sad, sad life we lead.
